The objective was to create a loading/ storage area, production kitchen, and delivery system to provide full service meals for small to large parties. The kitchen needed full refrigeration storage, large prep area, dishwashing, and large cooking area, along with some additional stations positioned throughout the building.
The kitchen is complete with a large cooking Hood complete with UDS System, large prep area, blast chiller, three compartment walk-in storage, dry storage, and flight dishwasher. There is a loading dock area with additional refrigerated and dry storage space. Strategically placed are some serving areas, dishwashing, and expediting stations for serving small and large parties using the convention center.
